Pancake Day

Pancake Day is one of the most underrated holidays in my opinion. It nicely bridges the gap between Valentine’s Day and Mother’s Day with battery goodness. Although I must admit I do normally forget until the day itself. This usually results in a rummage round the cupboards for whatever ingredients and toppings I can find. This year I have done my research on Pinterest and made a dedicated ‘Pancake Day‘ board. It is full of tempting recipes to try but I’ve selected some of my favourites below.
Lemon and blueberry is a classic combination. Although, if you wanted to make something more exciting then this recipe is the perfect base for all of your pancake creations. Try adding your favourite fruits and berries, chocolate chips or toffee chunks to this light and fluffy pancake batter.
Gluten-free options have become much more common in recent years. Buckwheat stands out as one of the best alternatives to flour as it is packed with nutrients. The slightly nutty flavour of the buckwheat pairs well with the banana. Plus this recipe is also completely vegan.
These delicate vegan crepes are a great egg-free option, simply consisting of flour, a milk alternative, and vegetable oil. The berry compote and vegan chocolate sauce make for a delicious combination but could be easily substituted for whatever toppings you fancy.
If you’re more of a savoury person then this recipe is a great option. The key is to not add too much of the chorizo and spring onion filling as this will affect the structure of the pancakes. Instead, generously pile the leftover filling on top with the chilli butter and a drizzle of syrup.
